Título: Efeito de peso e de sexo sobre as caracteristicas de processamento de surubins (Pseudoplatystoma sp.) cultivados

Abstract: O objetivo do presente estudo foi investigar os efeitos de peso total e de sexo sobre os rendimentos de processamento de surubins cultivados. Foram analisados dados de 261 peixes, provavelmente hibridos (Macho de Pseudoplatystoma coruscans x Femea Pseudoplatystoma fasciatum), sendo 123 machos (peso total entre 1.305 a 4.995 g) e 138 femeas (entre 1.540 a 6.670 g), adquiridos de duas pisciculturas comerciais. Das caracteristicas observadas foram calculados em relação ao peso total os percentuais (%) de: peso eviscerado com cabeça - PECC; de cabeça - PCAB; de visceras - PVIS; de gonadas - PGON; de guelras - PGUEL; de filés de barriga com pele - PFBP, de filés de dorso com pele - PFDP, de total de filés com pele- PFTP, de filés de barriga - PFBS, de filés de dorso - PFDS, de total de filés - PFTS de ossos - POSS, de pele - PPEL, de residuos com a pele PRES1, de resíduos sem a pele PRES2. As variáveis PGUEL e PPEL não sofreram efeito de peso total. A variável PGON apresentou valores muito dispersos, não sendo possivel neste trabalho estudar separadamente o efeito de peso total e de sexo. Para as demais caracteristicas o efeito de peso total foi significativo, comportando-se com razoável ajustamento ao modelo teórico hiperbólico; sendo o efeito de maior importancia para valores menores que 3000 g. Houve uma redução dos rendimentos com o aumento dos valores de peso total para as variáveis: PNAD, PCAB, POSS, PRES1, PRES2, tendendo a uma estabilização acima do valor de 3000g. Nas demais caracteristicas o comportamento foi no sentido de aumento. Não houve diferença no comportamento do efeito de peso total entre os sexos para as caracteristicas PNAD, PCPEVCAB, PFBP, POSS, PFBS e PRES1. De acordo com os modelos ajustados, nas variáveis PVIS, PFBP, PFDS e PFTS os machos devem apresentar valores, em geral, superiores aos das femeas em um determinado peso total. Para a variável PGUEL os valores médios foram significativamente superiores para femeas, já para a variável PPEL não houve diferença significativa.
The objective of this study was to investigate the effects of total weight and of sex on the processing yields of cultivated surubins. 261 fishes were analyzed, probably hybrid (Male, of Pseudoplatystoma coruscans x Female, Pseudoplatystoma fasciatum), being 123 males (total weight between 1.305 to 4.995 g) and 138 females (between 1.540 to 6.670 g), from two commercial fish farms. The examined characteristics were used to calculate the yields as a percentage of total weight (%): eviscerated weight with head yield - PECC; head percentage - PCAB; viscera percentage - PVIS; gonads percentage - PGON; gill percentage - PGUEL; fillets of belly with skin yield - PFBP, fillets of loin with skin yield - PFDP, total fillets with skin yield - PFTP, fillets of belly yield - PFBS, fillets of loin yield - PFDS; total fillets yield - PFTS; bones percentage - POSS, skin percentage - PPEL, waste percentage containing the skin PRES1, waste without the skin PRES2. There has not been a significative effect of total weight for the variables PGUEL and PPEL. In relation to the variable PGON showed very dispersed values, not being possible in this work separately study the effect total weight and sex. For the others characteristics the effect of total weight was significative, with reasonable adjustment to the hyperbolic (I) model theoretical; being the effect of larger importance for values smaller that 3000 g. Did have a reduction of the yields with the increase of the values total weight for the variables: PNAD, PCAB, POSS, PRES1, PRES2, tending the a stabilization above of value of 3000g. In the others characteristics the behavior was in the sense of increase. Did not have difference between the sexes in relation the behavior of effect total weight for the characteristics PNAD, PCPEVCAB, PFBP, POSS, PFBS and PRES1. In accord with the adjusted models, in the variables PVIS, PFBP, PFBS and PFTS os males shall exhibit values, in the main superior to the of the females into a determinate total weight. For the variable PGUEL the mean values were significantly superior for females, already for the variable PPEL not had significative difference.
