Título: Anais da 7ª Semana de Engenharia de Alimentos (Sealim) e do 5º Simpósio de Frutos Nativos e Exóticos (Sinatex) Abstract: The Proceedings of the 7th Food Engineering Week (Sealim) and the 5th Symposium of Native and Exotic Fruits (Sinatex) compile the scientific production presented at the events held between September 22nd and 24th, 2025, at the Faculty of Pharmaceutical Sciences, Food and Nutrition (Facfan) of the Federal University of Mato Grosso do Sul (UFMS). Sealim is an academic event of the Food Engineering course with a dynamic program, aligned with the demands of the sector and the formative practices of the university. Sinatex is an interdisciplinary space focused on the debate about socio-biodiversity, the sustainable use of native fruits, and the future of the regional bioeconomy. Both have contributed to strengthening the integration between teaching, research and extension. The 2025 edition had as its themes "Trends and Innovation in Sustainable Foods" and "What kind of bioeconomy do we want?" and fostered a rich exchange of knowledge through lectures, workshops, technical visits, scientific presentations, innovation initiatives and the Sociobiodiversity Fair. The diversity of the contributions in this collection reinforces the commitment of UFMS and Facfan to critical thinking, applied research, sustainability and development of innovative solutions in the food sector. Título: 4º SINATEX - Simpósio de Frutos Nativos e Exóticos Abstract: The IV Symposium of Native and Exotic Fruits (Sinatex) of the Faculty of Pharmaceutical Sciences, Food and Nutrition of the Federal University of Mato Grosso do Sul (UFMS), in 2023, had as its theme "Bioeconomy: Science of the Future in the Present", being a vital space for discussion and deepening of crucial themes in the bioeconomy scenario due to its relevance in exploring the scientific wealth of the state of Mato Grosso do Sul, especially with regard to native and exotic fruits present in ecosystems such as Pantanal, Cerrado and remnants of the Atlantic Forest, vast environments in potentialities for research in bioeconomy, ranging from the production of biopharmaceuticals, bioinputs to the manufacture of diversified bioproducts. Título: III Simpósio de Frutos Nativos e Exóticos (SINATEX), V Encontro Acadêmico de Tecnologia em Alimentos (ENATA) e Semana Acadêmica de Engenharia de Alimentos (SEALIM 1.0) Abstract: SINATEX – Symposium of Native and Exotic Fruits, in its third edition, is a scientific event of the Federal University of Mato Grosso do Sul - UFMS, whose organization involves technicians, students and professors from graduation courses in Food Technology, Food Engineering, Nutrition, Pharmacy and Biological Sciences, and postgraduation courses in Health and Development in the Central-West Region and Biotechnology and Biodiversity, at UFMS. This year, the scientific event, III Sinatex, is linked to academic events, V ENATA - Academic Meeting on Food Technology and SEALIM 1.0 - Academic Week of Food Engineering. The events aimed to show the importance of valuing the use of flora resources from Cerrado and Pantanal biomes as a source of food and income in rural communities, combining economic benefits with conservation practices, guaranteeing the livelihood of families and their settlement in the countryside and sustainable extractivism. Thus, Sinatex, Enata and Sealim present in their annals research works and experience reports from various Education and Research Institutions, in which their authors seek to disseminate results of scientific studies and/or with social relevance in the areas of food quality analysis, processing and use.
