Abstract
The objective of this study was to 3D print a gummy-style candy using a plant-based, protein-enriched formulation. Exploratory formulations were developed through successive adjustments to ingredients, composition, and processing parameters. Ultimately, a formulation with suitable extrusion properties was obtained, resulting in a product that maintained its printed shape and exhibited characteristics typical of gummy candies. The final product featured a protective film, was non-sticky to the touch, felt firm yet soft when consumed, and had a slightly acidic flavor characteristic of this type of candy. The incorporation of rice protein contributed to the development of a protein-rich alternative free from animal-derived ingredients, distinguishing it from commercial formulations. Thus, the results demonstrate the technological feasibility of producing plant-based, protein-enriched gummy candies via 3D printing, contributing to the advancement of innovative formulations in the field of printed foods.
